Korean Golden Sweet potatoes come in all shapes and sizes! Fingerlings are potatoes that come out skinnier and narrower in shape, yet they are fully mature when harvested. Fingerlings are packed with nutrients, and are a convenient size for easily cooking potato wedges. They are rich in vitamins, antioxidants, and potassium. They are also very easy to cook! They used to be 'undesirable' because the size doesn't fit the conventional grocery store requirements, but now they have gained popularity among chefs because of their convenience, faster cooking time, no need to peel! And they still provide all of the same health benefits.
